Our potato candy is OLD!

As kids, me and my cousin looked forward to it every Christmas... pretty rich though. I learned it from my Aunt. Kind of a tricky recipe to make. Peel and chop a potato in large pieces. Boil it soft and let cool to room temperature. Mash the potato with a fork and continue mashing and mixing with powdered sugar until you have a dough. Lay out wax paper, sprinkle with powdered sugar and roll out dough. Spread with peanut butter. Roll up and slice, then refrigerate. Not too much powdered sugar or the dough will crack and be too hard and not taste as good.
